Ingredients
- 75g Damsons
- 75g goats cheese
- 2 heads of chicory
- 100g mesculin
- 20g hazelnut
- 1 Apple
- 25ml red wine vinegar
- 75ml extra virgin olive oil
- 25ml red wine vinegar
- 50g sugar
- 100ml water
Method
- Boil the sugar water and 25ml vinegar in a pot, remove from the heat
- De stone the damsons and place in the warm liquid and leave for ten minutes
- Chop the apple into nice slices
- Add the lettuce, apple, chicory into a mixing bowl, add the remaining vinegar and the olive oil, season and toss until all the leaves are coated
- Put your salad mix in bowls top with the macerated damsons and crumb the goats cheese over the top and sprinkle with roasted hazelnuts
