Fajitas
- 8 Corn or flour tortillas
- 3 Avocados
- 250g Frozen corn/ tinned is fine
- 2 Limes
- 1 Large bunch coriander
- 200ml Yogurt
- 1 Tin of Pinto or black beans
- 2 Garlic cloves
- 3 tsp oregano
- 2 Arbol chilli's or 1/2 tsp chilli flakes
- 1/2 tsp cinnamon
- 1/2 tsp smoked paprika
- 4 portabello mushrooms
- 2 large peppers, any colour
- 1 red onion
- Salt and pepper
