Ingredients

Dough

  • 300g Plain flour
  • 200ml Boiling water
  • Pinch of salt

Filling

  • 300g of pork shoulder or minced pork
  • 1/2 tsp of baking soda
  • 1 tsp of corn flour
  • 1 1/2 tsp of salt
  • 1 tsp of sugar
  • Pinch of white pepper
  • 3 tbsp of cold water
  • 1 tbsp of Shaoxing rice wine or dry sherry
  • 1 tsp of dark soy sauce
  • 1 tsp of light soy sauce
  • 2 tbsp of sesame oil
  • 200g Pak choi, finely chopped
  • 2 Spring onion, finely chopped
  • 2 tsp of ginger, finely diced
  • 1 Clove of garlic, finely diced

Dipping Sauce

  • 1 tsp of sesame oil
  • 2 tbsp of light soy sauce
